The concept of sustainable supply chain in the food industry is often related to the one of Short Food Supply Chain (SFSC), which includes several practices that can be summarized into three categories: geographical proximity, disintermediation and information richness. This paper presents the results of 8 in-depth case studies in the fruit & vegetables and dairy products industries in Italy, investigating the drivers, the practices and the performance of SFSC models. Results provide a comprehensive framework to analyze SFSC and evidence about the relationships among the main constructs. Company size emerges as the key differentiator between alternative configurations of SFSC.

Abstract
The concept of sustainable supply chain in the food industry is often related to the one of Short Food Supply Chain (SFSC), which includes several practices that can be summarized into three categories: geographical proximity, disintermediation and information richness. This paper presents the results of 8 in-depth case studies in the fruit & vegetables and dairy products industries in Italy, investigating the drivers, the practices and the performance of SFSC models. Results provide a comprehensive framework to analyze SFSC and evidence about the relationships among the main constructs. Company size emerges as the key differentiator between alternative configurations of SFSC.I documenti in IRIS sono protetti da copyright e tutti i diritti sono riservati, salvo diversa indicazione.
