In this position paper, we present an overview of the most popular policy-as-code frameworks for developing and deploying applications in edge and cloud environments. We compare them in terms of features, flexibility, and integration with existing ecosystems, with a focus on defining policies that address security and privacy specifications for data, communications, and environment configurations. Finally, we describe a case study to demonstrate the practical use of these frameworks and their relevance at different stages of the cloud or cloud-edge application development process.
