A product-services system for improving the management and protection of food by reducing in particular, the waste of fruit and vegetables and improving the working conditions of sellers during the market. Developed through an analysis of everyday operations in the Milanese street markets (characterized by the waste of products and packaging, long set-up time, and poor safety of sales installations), based on interviews with operators and customers, it suggests a modular display system with interchangeable and adoptable elements, equipped with accessories capable of contributing to the correct preservation of the food. It also introduces a digital component that tracks the product from wholesale to the final purchase.
