This text presents tools for the analysis and design of food supply chains developed in the 'Bioregione' research. The study aims to deepen the processes that connect supply and demand in a local area, and to develop improvement scenarios. The supply chains concern the main food items that make up the aggregate demand for consumption in the various phases, from in-the-field production to the cooking center supply, consumption phase and waste management. The indicators used are the total energy demand, the productive land accounting for quantity of product or equivalent meal, and the production cost. They constitute experimental tools for local land use planning that puts at the center a new environmentally sustainable countryside-city metabolic model.
